Peel the onion and cut into cubes. Wash carrots, celery and leek. Depending on the degree of dirtiness, celery can also be peeled. Cut carrots and celery into small cubes, and leek into thin rings. Heat a little oil in a large saucepan and fry the chopped onion until translucent. Fry carrots and celery cubes and leek rings for about 5 minutes.
