Ingredients for 4 servings:

  • 200 g brown and dried lentils
  • dipping water
  • 1.5 liters of vegetable broth
  • 2 bay leaves
  • salt pepper
  • 2 onions
  • 5 carrots
  • 300g celeriac
  • 2 green onions
  • 1 tbsp oil
  • 2 cloves of garlic
  • 2 tablespoons mustard
  • 1 teaspoon of sugar
  • thyme
  • 3 tablespoons balsamic vinegar

Approximate per person:

  • 328 calories
  • 7 g fat
  • carbs 46g
  • 18 g protein

Preparation time:

  • 25 minutes (an additional 12 hours to soak, an additional 50 minutes to cook)

and do that


  1. It is best to cover the dried lentils and soak them in about 700 ml of water overnight. Then, in a large pot, add soaked water and 400ml of vegetable stock and bring to a boil. Season with salt and pepper and add bay leaves. Boil for 40 minutes.
  2. In the meantime, peel the onion, carrot and celery and cut into small cubes. Wash the leek and cut it into thin rings. Heat oil in a large pan and fry the vegetables. Peel the garlic and press other vegetables through a press. Let everything cook for about 10 minutes.
  3. Now deglaze the vegetables with a little broth. Boil for another 5 minutes. Add the contents of the pan to the lentils in the pan and stir.
  4. Remove the bay leaves and season the soup with mustard, sugar, thyme and balsamic vinegar. Then it can be served.


tip: Need a meat side dish? Then add the Wiener sausage to the soup. It has a few more calories, but the whole is much more filling. Perfect for hungry people.
