Lentil Soup with Beetroot, Carrots and Chickpeas: Well, delicious!

Soup is good: Lentil Soup with Beetroot, Carrot and Chickpeas

We celebrate seasonal greens with a bowl of lentil soup with beetroot.

We also cook soup in the summer. In particular, we use a soup with beetroot, one of our favorite seasonal vegetables.

Ingredients for 4 servings:

  • 1 onion
  • 1 clove of garlic
  • beetroot 500g
  • 1 leek
  • 1 large carrot
  • 100 g chickpeas (cooked in a can or glass)
  • 200 g red lentils
  • Oil
  • 900ml vegetable broth
  • 1 bay leaf
  • 1 teaspoon Sambal Oleg
  • 1 pinch of cinnamon
  • salt pepper

And this is how it gets done:

  1. First, peel the onion and garlic and chop them finely. Then wash the beetroot and cut the stems and leaves separately. Also wash the leeks and carrots and cut into rings or slices. Wash the chickpeas and drain the water.
  2. Fry the chopped onion in a pan with oil until translucent, saute the garlic for 1 minute, then add the beetroot, carrots and lentils. After a few minutes, add the leek and sweat.
  3. Pour the broth into the ingredients of the pot, add bay leaves and boil for 15 minutes. Then add the beetroot and chickpeas and leave on the stove for another 5 minutes.
  4. Finally, remove the bay leaves, sprinkle with sambal oleic and season the soup with cinnamon, salt and pepper. Serve puree or as is.

Soup in summer? Of course, why not! After all, this is a real star of the summer season. We are cooking lentil soup with beetroot. Large, green leaves with colorful stems have been found since early summer and can still be obtained in September. So: Grab a pot and let’s go!

It’s worth knowing: When preparing beetroot, always make sure that the cooking times for the stems and leaves are different. The former are much thicker, so it will take a few minutes longer than the others. In no case do not throw them away because you feel the stems are too rough. It would be a shame to simply throw away too many plants.
