Delicious & Vegan: Red Lentil Soup with Eggplant and Coconut Milk

The combination of red lentils and eggplant is incredibly delicious and adds Asian flavor in coconut milk and fresh coriander. So good. You must try this lentil soup!
Do you love red lentils and are looking for new combinations? Then red lentil soup with eggplant and coconut milk is for you!
And this is how it gets done:
- In the first step, wash, trim, and quarter the eggplant lengthwise, then cut into bite-size pieces. Shallots, garlic and ginger, peeled and finely chopped. Heat oil in a pan and fry the eggplants over high heat until golden brown. Add shallots, garlic and ginger and saute for about 3 to 4 minutes.
- Then add spices and curry paste and simmer for a while. Now mix the tomato pasta and pour in the broth and coconut milk. Rinse and drain the lentils, place in a saucepan and simmer until the lentils are soft, about 15-20 minutes.
- In the meantime, rinse the coriander leaves, shake dry, and set aside a few stems. Take the remaining leaves and chop them finely. Season the soup with salt and pepper, add chopped coriander and stir. Garnish with the remaining coriander and serve. Soup is ready. We wish you a good appetite!
