This bolognese is a great plant-based alternative to the classic bolognese sauce.

For 2 servings you will need:

  • 1 onion
  • 1 clove of garlic
  • 1 chili pepper
  • 2 carrots
  • 1 tbsp olive oil
  • 150 g red lentils (dry weight)
  • 3 tablespoons tomato paste
  • 300 g peeled tomatoes
  • 400ml vegetable broth
  • salt and pepper
  • oregano
  • basil
  • paprika powder

Preparation takes about 25 minutes.

  1. Peel the onion and garlic cloves. Cut the onion into fine cubes.
  2. Chop the garlic cloves and red pepper. If you don’t like spicy, remove the chilli seeds first.
  3. Wash the carrots and remove the ends. Then cut into cubes.
  4. Heat the olive oil in a pan.
  5. Fry the onion and garlic in hot oil for 2-3 minutes.
  6. Now add the chili, carrots, lentils and tomato paste to the pan.
  7. Fry the whole for another 2-3 minutes, then deglaze everything with the peeled tomato and vegetable broth.
  8. Boil the bolognese for 10 to 15 minutes. Season with salt, pepper and spices.

This red lentil patty is a delicious accompaniment to rice, potatoes or vegetables. However, it is also suitable as finger food with a moderate dip or as a burger patty. They taste great both hot and cold and will keep you in the refrigerator for several days.

For about 15 patties you will need:

  • 200 g red lentils (dry weight)
  • 1 onion
  • 1 carrot
  • Choose fresh herbs like parsley coriander
  • 4 tbsp flour
  • 4 tablespoons yeast flakes
  • salt and pepper
  • 1 teaspoon curry
  • 1/2 teaspoon paprika powder
  • vegetable oil for frying

How to prepare a lentil patty in about 30 minutes:

  1. Put the red lentils in a pot and pour water. Boil for 10 to 15 minutes until the lentils are fine and soft.
  2. In the meantime, peel the onion and cut into fine cubes.
  3. Wash the carrots, remove the ends and grate them finely.
  4. Cut the herbs with a sharp knife.
  5. When the lentils are done, drain them with a colander.
  6. Place lentils, onions, chopped carrots, herbs, flour and yeast flakes in a bowl and mix all ingredients well.
  7. Season the mixture with salt and pepper and add the curry powder and paprika.
  8. Knead the ingredients into a malleable burger mass. If the mixture is too thin, add a little flour. If the mass is too hard, add water.
  9. Heat vegetable oil in a pan.
  10. Make the patties by hand, then fry on both sides until golden brown. The patties should cook for about 3-5 minutes per side.

  • 1 onion

  • 250ml coconut milk
