Vegan Schnush with Seasonal Vegetables

Wash and peel the potatoes. Then cut into small cubes. Chop the onion into fine rings.

Wash the mung beans, remove the ends and cut in half. Cut the carrots. Kohlrabi is also peeled and cut into cubes. Peel the peas.

Add vegetables except onion to boiling salted water. Cook for about 10 minutes before sieving.

Place 1 tablespoon of vegan margarine in a large saucepan and melt over medium heat. Then, stir in the flour with a whisk and toast a little while constantly stirring.

Deglaze the roux with soymilk and mix with a whisk until a creamy soup is formed. Then add soy sauce cream and remove the pan from the stove.

Melt the remaining margarine in another pot. Fry the onion over medium heat for about 3 minutes. Then add the pre-boiled vegetables in the brine and fry for 2 minutes, then season everything with the vegetable broth.

Simmer over medium heat for another 10 minutes before adding the vegetables and broth to the milky soup. Mix everything thoroughly and then season the Schnüsch with salt. finished!
