Spanish Vegetable Soup with Chili

Spanish classic and colorful for the cold season: Spanish vegetable soup with chili!

Light and delicious Spanish vegetable soup with chili is the ideal starter for a traditional Spanish dinner.

Ingredients for 4 servings:

  • 2 red onions
  • 2 cloves of garlic
  • 1 small chilli
  • 200 g pumpkin
  • 250 g mushrooms
  • 1 large chilli
  • 400g corn (can)
  • 2 tablespoons olive oil
  • 400g tomato pasta
  • 1 liter tomato juice
  • To taste:
  • Chili Flakes, Lemon; parsley or cilantro

Approximate per person:

  • 240 calories
  • 8 g fat
  • carbs 32g
  • 10 g protein

And this is how it gets done:

  1. Wash and clean vegetables thoroughly. Eighth onion. Chop the garlic finely. Cut the seeded peppers into very fine rings. Slice the zucchini and mushrooms thickly, and cut the red pepper into bite-sized pieces. Rinse the corn.
  2. Heat the olive oil in a large pot. Stir-fry the onion, garlic and pepperoni for 2 minutes. Add fresh vegetables and continue to fry for 3 minutes. Pour in the tomato pasta, tomato juice and 100ml of water. Cover with a lid and bring to a boil, then simmer over low heat for 10 minutes.
  3. Add corn and simmer for another 10 minutes, then season with chili flakes and lemon. Partially sprinkle with freshly chopped parsley or coriander.
