Sweet Potato and Lentil Curry Soup – Recipes

Regensburg.I’m not a soup fan, but the slightly spicy lentil curry with sweet potatoes packs a punch and is very nutritious.

Autumn is my favorite season. I still love a little warm “Indian Summer” walk and look forward to spending a cozy evening at home again. It goes best with delicious and hot food.

As a vegetarian, I’m always looking for new recipes in a specific way that don’t come from German cuisine. This lentil curry soup is quick and easy to make, so it’s a good idea to cook in bulk and box it up to freeze. So you can go to work later that week or quickly heat up a bowl in your microwave or stove at home. It tastes even better when reheated.

Red lentils are considered very healthy and provide a good source of protein, especially for vegetarians and vegans. Sweet potatoes are high in vitamin E, which protects skin cells from aging skin. In other words, it is a true beauty product. Ginger helps prevent colds in the fall. But no matter how healthy lentil soup may be, the most important thing is that it tastes good and isn’t complicated.


And this is how soup works. First, wash the sweet potatoes and carrots and remove the skin. Also peel the onion, garlic (garlic powder can be used) and ginger. Cut the ginger and all other ingredients into as small cubes as possible. Then fry the sweet potatoes and carrots in a pan with olive oil. Now add curry powder and fry briefly. This is how the flavor of spices develops best.

Now add the lentils, onion, garlic and ginger and fry lightly. Best not to add salt yet. Otherwise, the red lentils will not be soft. Now pour about 350ml of water into the pot, close the lid and simmer the broth over low heat for about 20 minutes. When the lentils are soft, you can add coconut milk. Soak everything and season with salt.

Squeeze the lemon in half. You can also add coriander if you like. It’s a matter of taste. To serve, season the soup with lemon juice and pepper. You can also pour the lentil soup into a bowl and add some cream or yogurt. Cucumber slices are also suitable as a fresh topping. Oven-baked baguettes or herbal baguettes are a must when dipping into the soup.


If you need 2 people: 1 medium sweet potato

2-3 large carrots, 1/2 clove of garlic or garlic powder, small pieces of ginger, 1 medium onion, 2 tablespoons olive oil, 1 1/2 tablespoons curry powder, 150g red lentils, 150ml coconut milk, salt, Pepper , 1 Lemon, Optional: Coriander, Yogurt, Baguette
