A nutritious vegetable soup that is quick and easy to make. Especially when it’s cold outside, the hot soup truly warms the soul. You will need:
- 4 potatoes, about 500g
- 1 pumpkin, about 200g
- 3 to 4 carrotabout 300g
- 1 celery, about 100 g
- 1 leek, about 80g
- 1 handful of peas (frozen)
- 1 liter vegetable broth
- 3 tablespoons tomato paste
- Italian Herbs

Step 1: Cut, cut and align.
When everything is ready, we begin to wash the individual materials. Then chop the vegetables. Cut carrots, potatoes and zucchini into bite-size pieces. Cut the leek into rings, and the celery into cubes. Set aside the carrots, potatoes, leeks and celery in a bowl and set aside the zucchini on a chopping board.

Heat a large saucepan and add a little oil. If hot, add potatoes, leeks, carrots, celery and 3 tablespoons of tomato paste. Fry everything briefly until it hits the bottom of the pan.
